Sushi
Are rolls customizable?
Yes. You may subtract, add & substitute (incremental fees starting at .50¢). Three or more may be considered a new roll and be charged as a separate price. Sushi Bento Boxes during lunch are not substitutional.

What's the difference between sashimi and nigiri?
Sashimi is sliced raw fish served without rice, focusing purely on the protein's pure flavor and texture.
Nigiri comes in two pieces of raw fish over rice.
Will we be charged for side sauces and why?
If you order more than three, we will charge up to $1.50. We've begun to charge starting at .50¢, due to many instances of them going to waste.

Are your fish fresh?
As fresh as we possibly can acquire in the desert! Our specialty fishes do not arrive frozen, which loses freshness due to slow freezing which creates large ice crystals that damage cell walls, leading to mushy texture and moisture loss they are sourced as-is in dry ice and broken down in-house.

Are tips shared with our chef?
Yes, a percentage is shared with all front & back-of-house chefs. We work as an ecosystem!

Should we still tip the chef separately?
Should you feel encouraged by your unique experience with them, they greatly appreciate it. A couple of options include:
+ Notating on receipt (ie., chef: $__ - server: $__) if you don't carry cash.

Can we request a chef?
When calling in to make your reservation, we will do our best to accommodate to your preference. There is a 97% guarantee. On the chance the reservations are behind, it may Depending on the flow,

If you are not 12 years or younger, no. You may either share with a loved one, or order a side of fried rice.
